Amparos:  A Sincere Thank You & Important Announcement by Rene Basto

As the owner of Amparo’s Breakfast and Coffee I’m happy to announce that we’re soon going to expand into a dinner service.  It’s a big accomplishment, and I didn’t do it alone – so I thought I’d take a moment to explain to you the concept and thank everyone – especially my Mom and God – who have made it all possible.

I knew Amparo’s was meant to be the moment things started falling into place as if some higher power was putting it all together for me…my mother is a big part of my life her strong Christian values have been a part of my personality ever since I could remember. My mom is a  kind and loving woman, so I thought, “Why not name my restaurant after her. after all her name does mean protection, a feeling of being warmed and welcome”  All of these feelings I wanted my customers to feel when they come in and eat in  my restaurant.

We put a lot of love into our breakfasts since we love what we do. My chef, David Solis. has a passion for cooking and I love that about him. We have used our creative minds and together have come up with unique touches like our homemade three chili marmalade served with a basket of bread (on the house).  Our breakfasts are different:   you won’t find anything like it on the island since it’s a combination of Mexican and American cuisine fused into one plate,  creating the flavor and style we take the pleasure of calling our very own. Just  Wait until you try our newest creation homemade coffee ice cream!

We also grow our own hand-crafted organic coffee which I owe a lot in part to Señor Mundo who also loves what he does very much. I wanted to keep the traditions of the people from Chiapas  so each bean is hand-selected and hand-picked from the best harvest yearly.  Our coffee is hand roasted with lots of love to ensure every cup our customers drink is special.  The town where we source our coffee from is called “Amparo Aqua Tinta,”  just like my mother’s name.   I knew a higher power was involved and it was meant to be when  I discovered her name  in the middle of the mountains of Chiapas.

I travel to Amparos Aqua Tinta in September with my friend and businesses partner danny thornton. personally experiencing the process of picking the coffee,  washing the beans and then drying them, to finally roasting them on an iron skillet. I know the hard work senor Mundo and his family do first hand. We are a family first: our restaurant is family friendly and we welcome everyone to try first hand the experience that is Amparo’s

I also wanted to thank the one person who deserves all the credit for my success: God.  When I was growing up my mother would say to me. “Always put God above all.” Thanks to my mother I always do.  Secondly I also wanted to thank everyone who has believed in me and my abilities, and become customers and friends.   Everyone who walks through that door becomes part of my family.

When  I originally moved to Cozumel from Texas I felt so lonely and I missed  home so much that  every time I would meet someone from the States I would get so excited because we could relate…even though I’m Mexican,  my culture is very different from the local traditions, so I felt out of place at first.. but I loved Cozumel so much and I wanted to stay here. It has been a blessing for me ever since…I’ve worked so hard to get were I am today and it’s because of the people who believe in me and what I’m trying to accomplish…

Rene Basto abrió Amparo’s hace poco más de un año. Aquí está para agradecerles y dar un aviso importante  …

Como propietario de desayuno y café Amparo’s me complace anunciar que dentro de poco tiempo ampliaremos nuestro horario para dar servicio de cena. Es un gran logro y no lo hice solo; así que consideré tomar un instante para explicarles el concepto y agradecer a todos –en especial a mi Mamá y a Dios – que han hecho que todo esto sea posible.

En el momento que todo comenzó a encajar, como si una fuerza superior estuviera uniendo las piezas para mí, supe que Amparo’s estaba destinado a ser. Mi madre es gran parte de mi vida. Desde que tengo memoria, sus fuertes valores cristianos han sido parte de mi persona. Es una mujer amable y cariñosa; por eso me pregunté “¿Por qué no poner su nombre a mi restaurante? Después de todo su nombre significa protección; una sensación de una calurosa bienvenida.” Mi deseo era transmitir esa sensación a mis clientes al momento de entrar y comer en mi restaurante.

También cosechamos nuestro propio café orgánico y que en gran parte lo debo al señor Mundo, quien también quiere mucho lo que hace. He deseado mantener las tradiciones de los pueblos de Chiapas; por ello, anualmente cada grano es cuidadosamente seleccionado y recolectado a mano de la mejor cosecha. Nuestro café es tostado a mano, con mucho amor, para garantizar que cada taza que nuestros clientes toman es especial. El poblado donde se origina nuestro café se llama Amparo Agua Tinta, como el nombre de mi mamá. Sabía que un poder superior estaba implicado y que esto estaba destinado a suceder cuando me topé con su nombre en plena sierra de Chiapas.

En Septiembre viajo a Amparo Agua Tinta con Danny Thorton, mi socio comercial, para vivir personalmente la experiencia de la cosecha de café, lavar los granos y luego secarlos para finalmente tostarlos en una sartén de hierro. De primera mano conozco el arduo trabajo que el señor Mundo y su familia realizan. Primero somos una familia: nuestro restaurante es familiar y nos complace recibir a todos para que vivan la experiencia de Amparo’s.

También deseo agradecer a la persona que se merece todo el crédito por mi éxito: Dios. Cuando era chico mi madre me decía: “Siempre coloca a Dios por sobre todas las cosas”. Gracias a mi madre, siempre lo hago. Luego quiero agradecer a todos aquellos que creyeron en mi y en mis habilidades, y quienes se han convertido en clientes y amigos. Todo aquel que cruza esa puerta forma parte de mi familia.

Cuando originalmente me mudé de Texas a Cozumel, me sentía muy solo y extrañaba tanto mi casa que siempre que me topaba con alguien de los EUA me emocionaba pues había afinidad… no obstante que soy mexicano, mi cultura es muy distinta a las tradiciones locales asi que al principio me sentí fuera de lugar. Sin embargo, me encantaba Cozumel y deseaba quedarme aquí. Desde aquel entonces ha sido una bendición. He trabajado con gran ahínco para llegar a donde me encuentro hoy, y se debe a las personas que creyeron en mi y en lo que estoy intentando lograr.

An ex-Connecticut Yankee who has called Cozumel home for over 18 years, Laura ran away to the Caribbean years ago, bumped around the islands teaching SCUBA diving, lost some time in Jamaica, and finally stopped in Cozumel for a 2 week vacation that hasn’t ended yet. With a degree in Journalism from a fancy private college she convinced her parents to pay for, Laura writes, edits, and creates the weeklyCozumel 4 You news,social media, and promotional articles about the island, as well as moderates the Cozumel 4 You Facebook group, which currently has over 25,000 members. Her long suffering husband, Fabian, has long since resigned himself to having zero private life, as he’s been involved in her various schemes and plots since his arrival. Una ex yanqui de Connecticut quien llama hogar a Cozumel desde hace más de 15 años. Laura escapó al Caribe hace años, desplazándose de una isla a otra dando clases de BUCEO. Se dedicó a perder el tiempo en Jamaica y finalmente se detuvo en Cozumel para pasar unas vacaciones de 2 semanas que aún no terminan. Convenciendo a sus padres que pagaran una elegante universidad privada, obtuvo su título en Periodismo y Laura crea semanalmente Cozumel 4You, medios sociales y artículos promocionales sobre la Isla y también es moderadora en el grupo Cozumel 4 You en Facebook que actualmente cuenta con 25,000 miembros. Fabián, s umuy tolerante marido, desde hace mucho tiempo se resignó a no tener vida privada, pues se ha visto implicado en los diversos proyectos y planes que urde Laura. Son orgullosos padres de diversos perros y gatos rescatados. Mientras contempla su paso a través de la vida en el Caribe mexicano,Laura continúa siendo la pesadilla en la existencia de su muy tradicional suegra mexicana.
