According to representatives from the Sociedad Cooperativa de Producción Pesquera Cozumel, lionfish from the island are in high demand.  In fact, they’ve sold over 700 kilos of the tasty reef invader this year alone.  Interestingly enough, although Cozumel hotels and restaurants are staple customers, locations in Solidaridad, Benito Juarez and other locations throughout the state are also ordering both fillets and whole fish.  Additionally, lionfish have a market price of 150 pesos/kilo for fillets, and 80 pesos/kilo for the whole fish.
